Holiday Bite-Sized Treats: Ways to Utilize Christmas Leftovers into New Year’s Eve Appetizers

Should you possess a bit of smoked salmon left, place it on mini pancakes and crown it with lumpfish caviar. Mini fishcakes are also just the ticket: If you have remaining fish or flaked salmon, mix it through creamy potatoes, combine with dill, lemon, and fried leeks, then roll in Japanese breadcrumbs and deep-fry.
You could also get creative with croquetas. Prepare the white sauce a few days ahead, then use leftover ham, chicken, or mushrooms for the interior. Whizz stale bread into breadcrumbs to cover them, then fry. Sausage roll mixtures are another perfect use for those breadcrumbs, or use them as a coating for bite-sized chicken. For flavour, all you need a bit of lemon zest and thyme, and they'll taste so much more. Incidentally, buttery pastries make superb crumbs, too.
One beloved treat at this time of year is a leftovers sandwich, and that doesn't have to stop after Boxing Day. Get some holiday meats in an sealed tub and store in the freezer. While you're at it, reserve some cranberry sauce and honey ham glaze in the refrigerator. When needed, defrost the meat, then place it in a hot oven with the saved glaze for a short time. Cool and slice thinly, then lay on top of some sourdough and start building sandwiches with lots of tangy sauce. Cut into small squares for a surefire hit.
Remaining poultry, meanwhile, could be transformed into a zingy salad. You often have a bit of dark meat left over, and it's perfect for something full of flavour. Pull the meat, then fry it slowly in a pan, and mix with leftover cranberry sauce loosened with citrus juice, a spoonful of soy and a little spicy oil. Garnish with fresh herbs and some sliced spring onion, and serve in small lettuce cups.
Revamping Remaining Veg
Veg, meanwhile, can be dressed up and fit for a party with a big batch of fried potato cake. Combine all your remaining vegetables with fresh herbs, then season and add a binding agent. Stamp out portions to about the size of blinis, then keep in the icebox. Refresh in a hot oven for a short time and top with whatever you like—perhaps sliced beef and grated horseradish. A good tip, though: save a stash for brunch the next day.
